Creating a Vegan Sloppy Joe didn’t seem like an impossible task, although getting the taste right was very important. I studied several recipes, trying out a couple of variations and came up with what evoked the closest to my sweet memory. I didn’t want to use a crumbled ground “meat” tofu product so opted for lentils instead, keeping it more unprocessed. Using very little oil keeps the fat content down, as well. The result was amazing–I know this because my family had 2 Joe’s each and they were disappointed that there weren’t any leftovers! I am definitely going to put this on my regular rotation in my kitchen of vegan favorites. Or maybe…I should elevate it to a once in a while meal so I can get that “Yay! Sloppy Joe’s tonight!” response!
