Congratulations to Josh for including several vegetarian and vegan offerings on the menu that show care and thought. I'll be there.

Some restaurants will also accommodate vegetarians and vegans with custom off-menu preparations — this is a common practice in the Napa Valley and I imagine the better Island chefs have similar backup plans. But of course, having the vegan and vegetarian dishes on the menu shows the kind of care and consideration that can make a restaurant successful with a varied clientele.
